First prize is purchasing a box of The Walnut Pantry's delicious Salted Caramel Walnuts. They’re every bit as addictive as they sound. Subtly sweet with a hint of salt, they're the perfect addition to any dish. Sprinkle with a dash of cayenne pepper to give them a little zing and spice, sealing the deal on flavour.
The dressing is my favourite, made with just three simple ingredients: extra virgin olive oil, balsamic vinegar, and fig preserves. It strikes the perfect balance of savory, tangy, and sweet. I love tossing this simple winter salad with this vinaigrette for a flawless finish, making every bite even more delicious.

Ingredients
- 2 cups The Walnut Pantry Salted Caramel Walnuts
- 2 cups Rocket
- 6 cups mixed greens, (Greens of your choice)
- 2 cups Fresh ready-to-eat Pomegranate Arils
- 1 blood orange, sliced (optional)
- 1/2 cup dried cranberries
- 1/2 cup crumbled goats cheese
BALSAMIC FIG DRESSING
- 1/3 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon fig preserves
- salt and black pepper
Instructions
- Add the greens to a large salad bowl. Add the POM POMS, oranges (if using), cranberries, goat cheese, and walnuts. Gently toss the salad.
- To make the dressing. Combine all ingredients in a glass jar and shake to combine. Just before serving, drizzle the dressing over the salad and gently toss. Enjoy!
